Squash Soup/ Apple crisp

Have you every wondered what to do with that nasty squash that comes in bountiful baskets every once in a while well I found a really good recipe for one of them.

It is called Butternut Squash Soup II from allrecipes.com

Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 medium carrot, chopped
  • 2 medium potatoes, cubed
  • 1 medium butternut squash - peeled, seeded, and cubed
  • 1 (32 fluid ounce) container chicken stock
  • salt and freshly ground black pepper to taste

Directions

  1. Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.
  2. Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper

I apparently put too much pepper in it for Terrances liking, so i have to eat the rest but it is good to me.


Well that was dinner and I am making apple crisp for desert (I think T is really hungry because he only hade like 5 bites of his soup because "it is burning my throat". But that is ok I am just learning his spice level. (Which is kinda bland for me but it is easier to add for me then take away for him.)

Apple oatmeal crisp (also from allrecipes.com

Ingredients

  • 1 cup brown sugar
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 3 cups apples - peeled, cored and chopped
  • 1/2 cup white sugar
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C.) Lightly grease an 8 inch square pan.
  2. In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
  3. Bake in the preheated oven for 40 to 45 minutes, or until golden brown.
Note: nextinge I will put in only 1tsp cinnamon and 1/4th a cup of white sugar
